My go-to lunch: Asian chicken salad

Lately when I want to have a tasty and healthy lunch at home, I make a yummy Asian style chopped chicken salad.  I use this recipe as a base with a few alterations.  I add about 2 cups of cooked chicken and 1/2 a small head of cabbage (chopped) for more protein and to make the salad go farther.  I love that it's simple enough that it can be thrown together pretty quickly and makes enough to have for a few days or would be a great salad to share with friends for a lunch date "in". 
This salad has been my go-to lunch all summer long in an effort to eat more veggies while still eat deliciously.  You should give it a try!  Maybe even invite some girlfriends over for a lunch date in, they'll be glad you did!  In fact, that's what I need to do!  :)
